Description

Bright and zingy lemon bars made with rice cereal, marshmallows, and a touch of white chocolate glaze.


Ingredients

Scale
  • 56 g (4 tbsp) unsalted butter
  • 300 g (10 oz) mini marshmallows
  • 30 ml (2 tbsp) light corn syrup
  • 5 ml (1 tsp) pure vanilla extract
  • 1/4 tsp fine sea salt
  • 2 tsp lemon zest (from 2 medium lemons)
  • 30 ml (2 tbsp) fresh lemon juice
  • 168 g (6 cups) crisp rice cereal (Rice Krispies)
  • 100 g (3.5 oz) white chocolate (optional glaze)
  • 15 ml (1 tbsp) lemon juice (for glaze)

Instructions

  1. Line a 9 x 13-inch (23 x 33 cm) pan with parchment.
  2. Melt the butter in a medium saucepan over low heat, stirring until foamy.
  3. Add mini marshmallows and corn syrup, stirring until smooth.
  4. Remove from heat and stir in vanilla, salt, zest, and lemon juice.
  5. Fold in crisp rice cereal until fully coated.
  6. Transfer the mixture to the prepared pan and press evenly.
  7. Melt the white chocolate and lemon juice for the glaze, then spread over cooled bars.
  8. Slice into 12 bars and serve.

Notes

For the best flavor, do not skip the lemon zest. Store uncut slab in an airtight container for up to 24 hours before slicing.
