  • 1/4 cup Soy Sauce
  • 2 tablespoons Brown Sugar or Honey
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh Ginger, minced
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Gochujang (or Gochugaru)
  • 2 tablespoons Rice Vinegar or Mirin
  • 1 tablespoon Vegetable Oil or Neutral Oil
  • 4 pieces Wooden or Metal Skewers
  • 1 tablespoon Sesame Seeds
  • 2 tablespoons Sliced Green Onions

Instructions

  1. In a mixing bowl, combine soy sauce, brown sugar, minced garlic, ginger, sesame oil, gochujang (if using), rice vinegar, and a splash of oil. Whisk until everything is blended nicely.
  2. Add the boneless chicken thighs or breasts into the marinade, ensuring each piece is fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 3 hours for maximum flavor.
  3. Set your grill or grill pan to medium-high heat.
  4. Thread the marinated chicken onto your skewers, leaving a little space between each piece so they cook evenly.
  5. Grill the skewers for about 4–5 minutes on each side until fully cooked and gently charred.
  6. Let the skewers rest for a couple of minutes.
  7. Finish by garnishing with sesame seeds and sliced green onions.
