Description

Ingredients

  • 1 lb Italian sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 8 oz refrigerated tortellini
  • 2 cups fresh spinach or kale
  • 12 tbsp olive oil
  • Salt and pepper to taste
  • Grated Parmigiano for serving

Instructions

  1. Prepare ingredients: Dice onion, mince garlic, open cans, measure broth.
  2. Heat olive oil in a large pot over medium heat, add Italian sausage, and brown until caramelized.
  3. Add diced onion to the pot with sausage fat and cook until translucent. Stir in minced garlic and cook until fragrant.
  4. Add diced tomatoes and chicken broth to the pot, scraping up browned bits from the bottom.
  5. Season with dried Italian herbs, salt, and pepper, then bring to a simmer for 5 minutes.
  6. Add tortellini to the boiling broth and cook according to package instructions until they float.
  7. Stir in fresh spinach or kale until wilted.
  8. Taste and adjust seasoning before serving. Top with grated Parmigiano.

Notes

For a creamier texture, consider stirring in a splash of heavy cream at the end. Perfect to serve with crusty bread.
