Description

Italian Sausage, Gnocchi and Tomato Soup is a hearty and flavorful dish that combines savory sausage, tender gnocchi, and rich tomatoes.


Ingredients

  • 1 pound Italian sausage (mild or spicy, your choice)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 package (16 ounces) gnocchi
  • 1 cup fresh spinach (optional)
  • Grated Parmesan cheese for serving
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned. Break it up with a wooden spoon as it cooks.
  2. Add the diced onion, carrot, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the crushed tomatoes and chicken broth. Stir well to combine.
  4. Add dried oregano, dried basil, salt, and pepper. Bring the mixture to a simmer.
  5. Once the soup is simmering, add the gnocchi. Cook according to the package instructions, usually about 2-3 minutes until they float to the top.
  6. If using fresh spinach, stir it in just before serving. Cook until wilted, about 1 minute.
  7. Taste the soup and adjust seasoning as needed.
  8. Ladle the soup into bowls and top with grated Parmesan cheese and fresh basil if desired.
