- 1 pound Italian sausage (mild or spicy, your choice)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 package (16 ounces) gnocchi
- 1 cup fresh spinach (optional)
- Grated Parmesan cheese for serving
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned. Break it up with a wooden spoon as it cooks.
- Add the diced onion, carrot, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute.
- Pour in the crushed tomatoes and chicken broth. Stir well to combine.
- Add dried oregano, dried basil, salt, and pepper. Bring the mixture to a simmer.
- Once the soup is simmering, add the gnocchi. Cook according to the package instructions, usually about 2-3 minutes until they float to the top.
- If using fresh spinach, stir it in just before serving. Cook until wilted, about 1 minute.
- Taste the soup and adjust seasoning as needed.
- Ladle the soup into bowls and top with grated Parmesan cheese and fresh basil if desired.
