- 1.5 lbs boneless, skinless chicken thighs
- 3 medium carrots, chopped
- 2 medium Yukon Gold potatoes, diced
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tsp fresh thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Dice the onion and mince the garlic; chop carrots and potatoes into bite-sized pieces.
- Optional: Sear chicken thighs in a skillet for 3-4 minutes until golden brown.
- Add seared chicken, carrots, potatoes, onion, garlic, thyme, and bay leaf to the slow cooker.
- Pour chicken broth over the mixture until just covered; stir gently.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
