  • 1 tablespoon vegetable oil
  • 1 cup baby spinach

  • 1 tablespoon corn starch mixed with 2 tablespoons water (for thickening)

Instructions

  1. Prepare all ingredients.
  2. Heat vegetable oil in a skillet. Season chicken thighs with salt and pepper. Cook until golden brown, about 5-7 minutes per side. Remove and let rest.
  3. In a pot, combine chicken broth, soy sauce, sriracha, minced garlic, and minced ginger. Bring to a boil.
  4. Add ramen noodles to the boiling broth and cook according to package directions (about 3-4 minutes).
  5. In a separate bowl, mix heavy cream and corn starch mixture. Slowly add to the broth, stirring constantly until the sauce thickens slightly.
  6. Thinly slice the cooked chicken.
  7. Once noodles are cooked, add spinach and scallions to the pot. Stir to combine.
  8. Add sliced chicken back into the pot. Heat through.
  9. Ladle ramen into bowls, ensuring each serving has noodles, chicken, and vegetables.
