Instructions
- Prepare all ingredients.
- Heat vegetable oil in a skillet. Season chicken thighs with salt and pepper. Cook until golden brown, about 5-7 minutes per side. Remove and let rest.
- In a pot, combine chicken broth, soy sauce, sriracha, minced garlic, and minced ginger. Bring to a boil.
- Add ramen noodles to the boiling broth and cook according to package directions (about 3-4 minutes).
- In a separate bowl, mix heavy cream and corn starch mixture. Slowly add to the broth, stirring constantly until the sauce thickens slightly.
- Thinly slice the cooked chicken.
- Once noodles are cooked, add spinach and scallions to the pot. Stir to combine.
- Add sliced chicken back into the pot. Heat through.
- Ladle ramen into bowls, ensuring each serving has noodles, chicken, and vegetables.
- Drizzle with sesame oil and additional sriracha if desired.
