- 2 cups fresh cranberries (about 200g)
- 6 oz thick-cut bacon, chopped
- 1 medium yellow onion, diced
- 1/2 cup dark brown sugar (packed)
- 1/4 cup apple cider vinegar
- 1/4 cup pure maple syrup
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice
Instructions
- In a large skillet over medium heat, cook chopped bacon until crispy, about 8-10 minutes. Reserve about 1 tbsp of the fat.
- Remove excess grease from the skillet; add diced onions and sauté until golden brown, approximately 5-7 minutes.
- Stir in cranberries, brown sugar, and maple syrup. Simmer until the cranberries burst, around 10 minutes.
- Add apple cider vinegar, cinnamon, and allspice; cook for an additional 5 minutes until thickened.
- For a smoother texture, blend with an immersion blender or in a food processor.
