  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 apples (about 2 pounds)

Instructions

  1. Preheat oven to 350°F (177°C) and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  3. Add flour, powdered sugar, cinnamon, baking powder, and salt to the wet ingredients. Mix until smooth. The batter should be thin.
  4. Peel, core, and slice the apples as thinly as possible. A mandoline slicer is recommended for uniformity.
  5. Toss the apple slices into the batter to coat them lightly.
  6. Layer the coated apple slices in the prepared loaf pan, pressing gently. Pour any remaining batter evenly over the top.
