Description
This Invisible Apple Cake is a French-inspired dessert featuring paper-thin apple slices layered in a light custard batter. It creates a visually stunning cake with a delicate texture that melts in your mouth.
Ingredients
Scale
- 3 eggs, lightly beaten
- 2/3 cup milk, slightly warmed
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 apples (about 2 pounds)
Instructions
- Preheat oven to 350°F (177°C) and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
- Add flour, powdered sugar, cinnamon, baking powder, and salt to the wet ingredients. Mix until smooth. The batter should be thin.
- Peel, core, and slice the apples as thinly as possible. A mandoline slicer is recommended for uniformity.
- Toss the apple slices into the batter to coat them lightly.
- Layer the coated apple slices in the prepared loaf pan, pressing gently. Pour any remaining batter evenly over the top.
- Bake for 50-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool for another 15 minutes.
- Slice the invisible apple cake carefully to reveal the apple layers and serve.
Notes
- Best served warm.
- Garnish with powdered sugar or serve with vanilla ice cream or whipped cream.
- For variation, add a pinch of nutmeg or substitute pears for apples.
- Store leftovers tightly wrapped in the refrigerator for up to three days.
