Ingredients

  • 1 cup unsalted pistachios (finely ground, plus a handful for decoration)
  • 1 cup mascarpone cheese
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter
  • ½ cup milk
  • 1 cup heavy cream
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare two 8-inch round cake pans by greasing them and lining the bottoms with parchment paper.
  2. In a food processor, pulse 1 cup of pistachios until finely ground. Set aside a handful for decoration.
  3. In a large mixing bowl, cream together 1 cup of unsalted butter and 1 ½ cups of granulated sugar until light and fluffy. Add in 4 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
  4. In another bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and the ground pistachios.
  5. Gradually add the dry ingredients to the wet mixture, alternating with ½ cup of milk until just combined. Be careful not to overmix!
  6. Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  7. In a mixing bowl, combine 1 cup of mascarpone cheese, 1 cup of heavy cream, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract. Beat until soft peaks form.
  8. Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of mascarpone frosting on top. Add the second cake layer and frost the top and sides of the cake.
  9. Sprinkle the reserved pistachios on top of the cake for a beautiful finish. You can also add some edible flowers for extra flair!
  10. Allow the cake to chill in the fridge for about 30 minutes before slicing. This helps the frosting set and makes for cleaner slices.
