Description

Honey BBQ Chicken Rice is a flavorful dish that combines tender chicken, sweet barbecue sauce, and fluffy rice.


Ingredients

  • 2 cups white rice
  • 4 boneless, skinless chicken breasts
  • 1 cup honey barbecue sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups chicken broth (or water)
  • 1 cup mixed vegetables (carrots, peas, corn)
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse the white rice under cold water.
  2. In a medium pot, combine the rice and chicken broth (or water) and bring to a boil.
  3. Once boiling, reduce heat to low, cover, and simmer for about 15-20 minutes, or until the liquid is absorbed and the rice is fluffy.
  4. While the rice is cooking, season the chicken breasts with garlic powder, onion powder, salt, and pepper on both sides.
  5. In a large skillet, heat the olive oil over medium-high heat.
  6. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the center.
  7. Once the chicken is cooked, pour the honey barbecue sauce over the chicken in the skillet.
  8. Reduce the heat to low and let it simmer for 5 minutes, allowing the chicken to absorb the flavors.
  9. Stir in the mixed vegetables and cook for an additional 3-4 minutes until heated through.
  10. Once the rice is cooked, fluff it with a fork.
  11. Serve the honey BBQ chicken mixture over a bed of rice.
  12. Optionally, sprinkle fresh parsley on top for a pop of color.
  13. Plate the Honey BBQ Chicken Rice and enjoy!
