Honey BBQ Chicken Rice is a flavorful dish that combines tender chicken, sweet barbecue sauce, and fluffy rice.

- 2 cups white rice
- 4 boneless, skinless chicken breasts
- 1 cup honey barbecue sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups chicken broth (or water)
- 1 cup mixed vegetables (carrots, peas, corn)
- Fresh parsley for garnish (optional)
Instructions
- Rinse the white rice under cold water.
- In a medium pot, combine the rice and chicken broth (or water) and bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for about 15-20 minutes, or until the liquid is absorbed and the rice is fluffy.
- While the rice is cooking, season the chicken breasts with garlic powder, onion powder, salt, and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the center.
- Once the chicken is cooked, pour the honey barbecue sauce over the chicken in the skillet.
- Reduce the heat to low and let it simmer for 5 minutes, allowing the chicken to absorb the flavors.
- Stir in the mixed vegetables and cook for an additional 3-4 minutes until heated through.
- Once the rice is cooked, fluff it with a fork.
- Serve the honey BBQ chicken mixture over a bed of rice.
- Optionally, sprinkle fresh parsley on top for a pop of color.
