- 1 1/2 cups whole wheat pastry flour or white whole wheat flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/4 cup brown sugar (or substitute coconut sugar)
- 1/4 cup blackstrap molasses
- 1/3 cup unsweetened applesauce
- 2 eggs, at room temperature
- 3/4 cup unsweetened vanilla almond milk (or milk of choice)

- 1/2 cup raisins
- 3/4 cup fresh or frozen blueberries

Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with only 10 liners, spraying the inside of liners with nonstick cooking spray.
- In a large bowl, whisk together the wheat bran, whole wheat pastry flour, baking powder, baking soda, salt, and cinnamon until evenly combined. Set aside.
- In another large bowl, mix the brown sugar, blackstrap molasses, unsweetened applesauce, eggs, almond milk, and apple cider vinegar until smooth and creamy.
- Add the dry ingredient mixture to the wet ingredients and gently fold with a spatula until just combined.
- Stir in the cooled, melted coconut oil until just incorporated. Fold in desired optional mix-ins like raisins, blueberries, or walnuts.
- Divide the batter evenly among the 10 prepared muffin liners. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
