Healthy High Protein Creamy Taco Soup: An Incredible Ultimate Recipe


Ingredients

Scale
  • 1 pound ground turkey or chicken
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 cups low-sodium chicken broth
  • 1 package taco seasoning (or homemade seasoning)
  • 1 cup Greek yogurt
  • 1 cup shredded low-fat cheese (optional)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the ground turkey or chicken and cook until browned, breaking it apart with a spoon.
  3. Stir in the chopped onion, bell pepper, and minced garlic. Cook until softened, about 5 minutes.
  4. Add the black beans and corn to the pot, stirring to combine all ingredients.
  5. Pour in the diced tomatoes and chicken broth. Stir well.
  6. Sprinkle in the taco seasoning, and season with salt and pepper to taste. Mix thoroughly.
  7. Bring the soup to a boil, then reduce heat and let it simmer for about 20 minutes to allow the flavors to meld.
  8. Remove the pot from heat and stir in the Greek yogurt until well combined.
  9. If desired, sprinkle in the shredded cheese and let it melt into the soup.
  10. Ladle into bowls and garnish with fresh cilantro before serving.
