Description

An easy, make-ahead Ham Spinach Breakfast Bundt perfect for brunch, combining protein, greens, and comfort in one savory dish.


Ingredients

Scale
  • 2 cups chopped spinach
  • 4 cups bread cubes (stale preferred)
  • 1 cup diced ham
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 cups hash browns
  • 4 large eggs
  • 1 cup milk or cream
  • 1 tsp mustard
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup sliced green onions

Instructions

  1. Heat a pan over medium heat and fry the chopped spinach until it wilts. Remove and set aside.
  2. In the same pan, add the hash browns and cook until golden brown, then remove from heat.
  3. Grease a Bundt-style baking dish and layer half of the bread cubes, ham, spinach, green onions, hash browns, and half of the cheese. Add remaining bread cubes on top.
  4. In a bowl, beat the eggs and mix with milk, cream, salt, pepper, and mustard. Pour over the layers and press gently. Let sit for 30 minutes.
  5. Sprinkle remaining cheese on top and bake at 400°F (204°C) for about 40 minutes or until set.
  6. Invert onto a plate and serve warm.

Notes

For best results, let the Bundt sit overnight in the fridge before baking for enhanced flavor and texture.
