An easy, make-ahead Ham Spinach Breakfast Bundt perfect for brunch, combining protein, greens, and comfort in one savory dish.
Ingredients

- 2 cups chopped spinach
- 4 cups bread cubes (stale preferred)
- 1 cup diced ham
- 1 cup shredded cheese (cheddar or your choice)
- 2 cups hash browns
- 4 large eggs
- 1 cup milk or cream
- 1 tsp mustard
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup sliced green onions
Instructions
- Heat a pan over medium heat and fry the chopped spinach until it wilts. Remove and set aside.
- In the same pan, add the hash browns and cook until golden brown, then remove from heat.
- Grease a Bundt-style baking dish and layer half of the bread cubes, ham, spinach, green onions, hash browns, and half of the cheese. Add remaining bread cubes on top.
- In a bowl, beat the eggs and mix with milk, cream, salt, pepper, and mustard. Pour over the layers and press gently. Let sit for 30 minutes.
- Sprinkle remaining cheese on top and bake at 400°F (204°C) for about 40 minutes or until set.
- Invert onto a plate and serve warm.
Notes
For best results, let the Bundt sit overnight in the fridge before baking for enhanced flavor and texture.
