  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 cup corn (frozen or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and bell pepper. Sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the ground turkey to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  5. Stir in the cumin, chili powder, paprika, salt, and black pepper. Mix well to ensure the turkey is evenly coated with spices.
  6. Pour in the diced tomatoes with their juice. Stir to combine.
  7. Add the black beans and corn. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld.
  8. If desired, sprinkle shredded cheese on top and cover the skillet until melted, about 2 minutes.
  9. Remove from heat and garnish with fresh cilantro if desired.
