- ¼ teaspoon black pepper
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 cup corn (frozen or canned)
- 1 cup black beans, rinsed and drained
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the ground turkey to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the cumin, chili powder, paprika, salt, and black pepper. Mix well to ensure the turkey is evenly coated with spices.
- Pour in the diced tomatoes with their juice. Stir to combine.
- Add the black beans and corn. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld.
- If desired, sprinkle shredded cheese on top and cover the skillet until melted, about 2 minutes.
- Remove from heat and garnish with fresh cilantro if desired.
