Description

Soft and healthy cookies made with Greek yogurt and chia seeds, perfect for busy mornings or a healthy dessert.


Ingredients

Scale
  • 250 g (2 cups) all-purpose flour
  • 120 g (½ cup) plain full-fat Greek yogurt
  • 100 g (½ cup) unsalted butter, softened
  • 150 g (¾ cup) light brown sugar, packed
  • 1 large egg
  • 10 g (2 tsp) baking powder
  • 3 g (½ tsp) baking soda
  • 3 g (½ tsp) fine salt
  • 30 g (3 tbsp) chia seeds
  • 5 ml (1 tsp) vanilla extract
  • Optional: 100 g (¾ cup) dark chocolate chips or 80 g (½ cup) dried cranberries

Instructions

  1. Cream the butter and sugar until pale and fluffy.
  2. Add the egg, Greek yogurt, and vanilla extract, mixing until just combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Fold the dry ingredients into the wet ingredients. Stir in chia seeds and optional mix-ins.
  5. Chill the dough for 10–20 minutes.
  6. Preheat oven to 180°C (350°F) and bake dough for 10–12 minutes.
  7. Allow cookies to cool before serving.

Notes

For thicker cookies, chill dough for 30–60 minutes. You can substitute flax seeds for chia seeds, but expect a different texture.
