Garlic Thanksgiving Turkey That Melts in Your Mouth


Ingredients

  • 1 whole Turkey (Fresh or frozen)
  • 1 medium Onion (Quartered)
  • 1 whole Lemon (Quartered)
  • 3 sprigs Fresh Rosemary
  • 3 sprigs Fresh Thyme
  • 3 leaves Fresh Sage
  • 1 tbsp Kosher Salt
  • 1 tbsp Fresh Ground Black Pepper
  • 1 cup Unsalted Butter (Softened)
  • 6 cloves Garlic (Mince for even distribution)
  • 2 stalks Celery (Quartered)
  • 2 medium Carrots (Chopped)

Instructions

  1. Bring turkey to room temperature (about 1 hour), and preheat oven to 325°F (160°C). Remove giblets and pat turkey dry.
  2. Generously season the cavity with kosher salt and pepper, and stuff with onion, lemon, rosemary, thyme, and sage.
  3. Combine softened butter with minced garlic, salt, pepper, rosemary, and thyme to make the herb butter.
  4. Loosen turkey skin, rub one-third of herb butter under skin and coat outside with remaining butter.
  5. Place onion, celery, and carrots in the roasting pan as a flavorful base.
  6. Transfer turkey breast-side up into roasting pan atop vegetables, tucking wings underneath.
  7. Roast turkey for 15 minutes per pound until internal temperature reaches 158°-160°F.
  8. Let turkey rest covered loosely with aluminum foil for 30 minutes before carving.
  9. After resting, carve turkey starting with breast and save drippings for gravy.
