- 1 lb (450 g) ground chicken
- ½ cup (50 g) breadcrumbs (plain or Italian-style)
- ½ cup (50 g) grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp milk
- 2 tbsp chopped fresh parsley (optional, for garnish)
- Optional Glaze: ¼ cup ketchup, 1 tbsp Parmesan cheese, ½ tsp garlic powder
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin, loaf pan, or line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, pepper, and milk. Mix gently until just combined.
- Divide the mixture into 4 equal portions. Shape each into a small loaf or press into muffin tin wells.
- For the optional glaze, stir together ketchup, Parmesan cheese, and garlic powder. Brush over the tops of each mini meatloaf.
- Bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the meatloaves rest for 5 minutes before serving. Garnish with fresh parsley if desired.

- Do not overmix the chicken mixture to keep the meatloaves tender.
- Use freshly grated Parmesan for the best flavor and texture.
