  • 1 cup heavy cream (or coconut milk for a dairy-free option)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
  3. Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Add the diced potatoes to the pot, stirring to combine with the onions and garlic.
  5. Pour in the vegetable broth, ensuring the potatoes are fully submerged.
  6. Stir in the dried thyme and rosemary, then season with salt and pepper to taste.
  7. Increase the heat to high and bring the mixture to a boil.
  8. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the potatoes are tender.
