  • 2 cups plain Greek yogurt
  • 1 cup cucumber, diced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1 ½ cups cooked rice or quinoa (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish with olive oil.
  3. Place chicken breasts in a single layer at the bottom of the dish.
  4. In a bowl, combine Greek yogurt, diced cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper. Stir well.
  5. Spread the tzatziki mixture evenly over the chicken breasts.
  6. Scatter cherry tomatoes and feta cheese on top.
  7. If using, add cooked rice or quinoa around the chicken.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
