Instructions
- In a bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla, lemon zest, and salt. Beat until fluffy; fold in the yogurt until silky.
- Warm a tortilla in a dry skillet for 10 to 15 seconds per side. Let cool slightly.
- Spread a generous layer of cheesecake filling over the tortilla, leaving about a 1/2 inch clear at the edges.
- Scatter fresh fruit evenly, ensuring not to pile it too high.
- Roll tightly from one side to the other, like making a burrito.
- If making pinwheels, wrap the roll in plastic and chill for 20 to 30 minutes, then slice.
- Dust with powdered sugar or drizzle with honey before serving. Serve cold.
