Ingredients

  • 1/2 cup powdered sugar

  • 1 tsp lemon zest

  • 1 cup Greek yogurt
  • 4 large tortillas
  • 2 cups fresh fruit (berries, mango, kiwi)
  • Powdered sugar or honey for garnish

Instructions

  1. In a bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla, lemon zest, and salt. Beat until fluffy; fold in the yogurt until silky.
  2. Warm a tortilla in a dry skillet for 10 to 15 seconds per side. Let cool slightly.
  3. Spread a generous layer of cheesecake filling over the tortilla, leaving about a 1/2 inch clear at the edges.
  4. Scatter fresh fruit evenly, ensuring not to pile it too high.
  5. Roll tightly from one side to the other, like making a burrito.
  6. If making pinwheels, wrap the roll in plastic and chill for 20 to 30 minutes, then slice.
  7. Dust with powdered sugar or drizzle with honey before serving. Serve cold.
