Description

Light and refreshing sandwiches with crisp cucumber slices and tangy herbed cream cheese, perfect for brunch or a fast lunch.


Ingredients

Scale
  • 1 large cucumber (English or regular)
  • 4 slices of bread (white, whole grain, or soft sandwich bread)
  • 4 ounces cream cheese, softened
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Wash and dry the cucumber, then slice it as thinly as possible.
  2. In a bowl, combine the softened cream cheese, chopped dill, lemon juice, a pinch of salt, and a few grinds of black pepper. Stir until smooth.
  3. Spread an even layer of the cream cheese mixture across each slice of bread.
  4. Arrange cucumber slices in a single layer on two of the bread slices, overlapping slightly.
  5. Close each sandwich with the remaining bread, cream cheese side down.
  6. Press gently and cut each sandwich into quarters.
  7. Serve immediately.
