- 1 large cucumber (English or regular)
- 4 slices of bread (white, whole grain, or soft sandwich bread)
- 4 ounces cream cheese, softened
- 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper, to taste
Instructions
- Wash and dry the cucumber, then slice it as thinly as possible.
- In a bowl, combine the softened cream cheese, chopped dill, lemon juice, a pinch of salt, and a few grinds of black pepper. Stir until smooth.
- Spread an even layer of the cream cheese mixture across each slice of bread.
- Arrange cucumber slices in a single layer on two of the bread slices, overlapping slightly.
- Close each sandwich with the remaining bread, cream cheese side down.
- Press gently and cut each sandwich into quarters.
- Serve immediately.
