Instructions

  1. Prepare your mold: Line a baking sheet or tray with parchment paper or lightly oil a flat surface like a marble countertop. Have an oiled spatula or rolling pin ready.
  2. Make the caramel: In a thick-bottomed saucepan, combine sugar, water, and lemon juice. Heat over medium heat without stirring until a golden caramel forms, about 7-10 minutes. Watch carefully to prevent burning.
  3. Add peanuts: Once the caramel is a beautiful amber color, remove from heat and quickly stir in the peanuts, ensuring they are well coated.
  4. Spread the mixture: Immediately pour onto your prepared surface. Spread as quickly as possible using a lightly oiled spatula or rolling pin to an ideal thickness of about 0.5 to 1 cm.
  5. Score before hardening: Before the croquant cools completely, score lines to make it easier to break or cut once hardened. Let it cool completely, then break or cut into pieces.
