Description

A comforting slow-cooker soup featuring savory sausage, tortellini, and fresh greens, perfect for busy weeknights.


Ingredients

  • 1 lb Italian sausage
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced bell pepper
  • 3 cloves minced garlic
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 package (9 oz) frozen tortellini
  • 4 cups fresh spinach or kale
  • 1/2 cup heavy cream (optional)

Instructions

  1. Prepare ingredients: chop onions, dice carrots and bell peppers, and mince garlic.
  2. In a skillet over medium heat, brown the Italian sausage until no pink remains, about 8–10 minutes.
  3. Add diced onions and garlic to the skillet; sauté until translucent, 2–3 minutes.
  4. Transfer sausage and onion mixture to the crockpot. Add chicken broth, diced tomatoes, carrots, bell pepper, Italian seasoning, salt, and black pepper. Stir to combine.
  5. Cover and set the crockpot on low for 4–6 hours or high for 2–3 hours.
  6. About 30 minutes before serving, stir in frozen tortellini.
  7. In the last 10 minutes, add the spinach or kale to wilt.
  8. If desired, stir in heavy cream just before serving.
  9. Season to taste and enjoy!

Notes

Feel free to customize with different vegetables or types of sausage. Adjust seasoning at the end for optimal flavor.
