  • Juice of half a lemon

Instructions

  1. Prepare the chicken: Pound chicken breasts to an even thickness. Season with salt and pepper.
  2. Set up dredging stations: Place flour in one shallow dish, beaten eggs in another, and a mixture of panko, 1 cup Parmesan, garlic powder, Italian seasoning, and paprika in a third.
  3. Coat the chicken: Dredge each chicken breast in flour, then egg, then the panko-Parmesan mixture, ensuring it’s fully coated.
  4. Cook the chicken: Heat 1/4 cup olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  5. Make the sauce: In the same skillet, add 2 tablespoons butter and 1 tablespoon olive oil. Sauté minced garlic until fragrant (about 1 minute).
