Instructions
- Prepare the chicken: Pound chicken breasts to an even thickness. Season with salt and pepper.
- Set up dredging stations: Place flour in one shallow dish, beaten eggs in another, and a mixture of panko, 1 cup Parmesan, garlic powder, Italian seasoning, and paprika in a third.
- Coat the chicken: Dredge each chicken breast in flour, then egg, then the panko-Parmesan mixture, ensuring it’s fully coated.
- Cook the chicken: Heat 1/4 cup olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
- Make the sauce: In the same skillet, add 2 tablespoons butter and 1 tablespoon olive oil. Sauté minced garlic until fragrant (about 1 minute).
- Deglaze (optional): Pour in white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for a minute.
- Add liquids: Stir in heavy cream and chicken broth. Bring to a simmer and cook until slightly thickened.
- Finish the sauce: Stir in 3/4 cup Parmesan cheese, thyme, and lemon juice. Season with salt and white pepper to taste.
- Combine: Return the crispy chicken to the skillet and spoon the luscious garlic cream sauce over it.
- Garnish and serve: Sprinkle with fresh parsley before serving.

- For extra crispy chicken, ensure your panko breadcrumbs are fresh.
