- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 medium onion, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 package (9 oz) fresh or frozen cheese ravioli
- 2 cups fresh spinach
- ½ cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the minced garlic and diced onion. Sauté until the onion is translucent and fragrant.
- Pour in the vegetable broth and bring it to a simmer.
- Stir in the heavy cream and continue to simmer for about 5 minutes.
- Gently add the ravioli to the pot and cook according to the package instructions, usually around 4-5 minutes.
- Once the ravioli are nearly cooked, stir in the fresh spinach and sun-dried tomatoes. Cook until the spinach wilts.
- Add Italian seasoning, salt, and pepper to taste. Adjust seasoning based on your preference.
- Ladle the soup into bowls and top with grated Parmesan cheese if desired.
