Description

Creamy Tuscan Ravioli Soup is a rich and flavorful dish that combines cheese ravioli with a creamy broth, fresh spinach, and sun-dried tomatoes.


Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 package (9 oz) fresh or frozen cheese ravioli
  • 2 cups fresh spinach
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and diced onion. Sauté until the onion is translucent and fragrant.
  3. Pour in the vegetable broth and bring it to a simmer.
  4. Stir in the heavy cream and continue to simmer for about 5 minutes.
  5. Gently add the ravioli to the pot and cook according to the package instructions, usually around 4-5 minutes.
  6. Once the ravioli are nearly cooked, stir in the fresh spinach and sun-dried tomatoes. Cook until the spinach wilts.
  7. Add Italian seasoning, salt, and pepper to taste. Adjust seasoning based on your preference.
  8. Ladle the soup into bowls and top with grated Parmesan cheese if desired.
