- 1 pound smoked sausage, sliced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes (about 2 medium)
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- In a large pot or Dutch oven, cook the sliced sausage over medium heat until browned. Remove sausage with a slotted spoon and set aside, leaving the drippings in the pot.
- Add the chopped onion to the pot and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Return the cooked sausage to the pot.
- Stir in the heavy cream, salt, and pepper. Heat through gently, but do not boil.
- Garnish with fresh parsley before serving your creamy sausage potato chowder.
Notes
- For a thicker chowder, you can mash some of the potatoes against the side of the pot.
- Feel free to add other vegetables like carrots or celery along with the potatoes.
- Smoked sausage provides a great depth of flavor, but any cooked sausage will work.
