Instructions
- Start by rinsing the Arborio rice under cold water until the water runs clear. This removes excess starch.
- In a large saucepan, combine the rinsed rice, whole milk, granulated sugar, and salt. Stir well.
- Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally.
- Once boiling, reduce the heat to low. Cover the saucepan and let it simmer for about 25-30 minutes, stirring frequently to prevent sticking.
- After the rice is tender and the mixture has thickened, stir in the vanilla extract, ground cinnamon (if using), and butter. Mix until well combined.
- If you prefer, fold in the raisins at this stage for added sweetness and texture.
- Remove from the heat and let the pudding cool slightly before serving. It can be enjoyed warm or chilled.
