  • 4 cups whole milk

  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon (optional)

  • 2 tablespoons butter

Instructions

  1. Start by rinsing the Arborio rice under cold water until the water runs clear. This removes excess starch.
  2. In a large saucepan, combine the rinsed rice, whole milk, granulated sugar, and salt. Stir well.
  3. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally.
  4. Once boiling, reduce the heat to low. Cover the saucepan and let it simmer for about 25-30 minutes, stirring frequently to prevent sticking.
  5. After the rice is tender and the mixture has thickened, stir in the vanilla extract, ground cinnamon (if using), and butter. Mix until well combined.
  6. If you prefer, fold in the raisins at this stage for added sweetness and texture.
