- 4 cups chicken broth

- 1 cup chopped onions
Instructions
- Season the chicken breasts with Cajun seasoning, ensuring they are evenly coated.
- In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onions, celery, and bell peppers. Sauté for about 5 minutes or until the vegetables soften.
- Place the seasoned chicken breasts into the pot. Sear for 2-3 minutes on each side until lightly browned.
- Pour in the chicken broth and add the diced tomatoes. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the chicken is cooked through.
- Carefully remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the soup.
- Taste the soup and adjust seasoning if necessary, adding more Cajun seasoning for extra spice if desired.
