- 4 egg whites (at room temperature, about 4 ounces)
- 1 cup granulated white sugar
- 1 teaspoon pure vanilla extract
- Gel food coloring (as desired)
- Sprinkles (for decorating)
Instructions
- Add the room-temperature egg whites to the bowl of a stand mixer or a large bowl if using a hand-held electric mixer.
- Whisk the egg whites until soft peaks form. Gradually add the sugar, 2 tablespoons at a time, whisking thoroughly between each addition.
- Divide the stiff meringue into separate bowls. Gently fold in a few drops of gel food coloring into each bowl.
- Spoon each colored meringue into one side of a piping bag fitted with a star nozzle. Pipe 2-inch diameter circles onto a baking sheet lined with baking parchment or a Silpat.
- Carefully insert a lollipop stick into each meringue circle. Add sprinkles on top immediately for decoration.
- Bake the meringue lollipops in a low-temperature oven (about 200°F or 90°C) for 60 minutes, then turn off the oven and leave the meringues inside for an additional 120 minutes.
