Description

Delightful and colorful Meringue Lollipops featuring airy, sweet meringue piped into bite-sized lollipops.


Ingredients

  • 4 egg whites (at room temperature, about 4 ounces)
  • 1 cup granulated white sugar
  • 1 teaspoon pure vanilla extract
  • Gel food coloring (as desired)
  • Sprinkles (for decorating)

Instructions

  1. Add the room-temperature egg whites to the bowl of a stand mixer or a large bowl if using a hand-held electric mixer.
  2. Whisk the egg whites until soft peaks form. Gradually add the sugar, 2 tablespoons at a time, whisking thoroughly between each addition.
  3. Divide the stiff meringue into separate bowls. Gently fold in a few drops of gel food coloring into each bowl.
  4. Spoon each colored meringue into one side of a piping bag fitted with a star nozzle. Pipe 2-inch diameter circles onto a baking sheet lined with baking parchment or a Silpat.
  5. Carefully insert a lollipop stick into each meringue circle. Add sprinkles on top immediately for decoration.
  6. Bake the meringue lollipops in a low-temperature oven (about 200°F or 90°C) for 60 minutes, then turn off the oven and leave the meringues inside for an additional 120 minutes.
