- 1 pie crust (or crumble topping)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine goumi berries, sugar, flour, salt, and a thickener (cornstarch or tapioca).
- Add lemon zest and vanilla if using; mix well.
- Pour the mixture into a prepared pie crust.
- Top with a second crust or crumble topping as desired.
- Bake for 40-45 minutes, or until bubbly and crust is golden.
- Let cool slightly before serving.
Notes
This pie can be made with frozen berries in a pinch. Try swapping goumi for currants, sour cherries, or wild blueberries if needed.
