- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup finely chopped pecans or walnuts (optional)
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, beat the butter and powdered sugar together until light and fluffy, about 2-3 minutes.
- Add the vanilla extract and beat until combined.
- Gradually add the flour and salt, mixing until just combined. Fold in the chopped nuts if using.
- If the dough feels too sticky, add more flour, a tablespoon at a time.
- Portion the dough into small, 1-inch balls using a spoon or cookie scoop.
- Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-14 minutes, or until set and lightly golden on the bottom.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Prepare the cinnamon sugar coating by combining the granulated sugar and cinnamon in a bowl.
- Once the cookies have cooled slightly, roll them in the cinnamon sugar mixture.
- Allow the cookies to cool completely before serving or storing.
