Classic Christmas Eve Lasagna – A Cozy Holiday Tradition

- 12 lasagna noodles
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 cups cooked, shredded chicken or sautéed vegetables (zucchini, mushrooms, spinach)
- 4 cups tomato sauce or marinara
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
- 2 cups ricotta cheese
- 1 large egg
- 1½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
Instructions
- Boil lasagna noodles in salted water until al dente. Drain and lay flat to prevent sticking.
- Heat olive oil in a skillet. Cook onion until softened, then add garlic. Stir in chicken or vegetables, tomato sauce, herbs, salt, and pepper. Simmer 15–20 minutes.
- Combine ricotta, egg, half the mozzarella, and Parmesan in a bowl. Mix until smooth.
- Spread a thin layer of sauce in a 9×13 baking dish. Layer noodles, ricotta mixture, sauce, and mozzarella. Repeat layers and finish with sauce and cheese on top.
- Cover with foil and bake at 375°F (190°C) for 30 minutes. Uncover and bake another 15–20 minutes until bubbly and golden.
- Let the lasagna rest at least 15 minutes before slicing.
Notes
- This lasagna can be prepared ahead of time and refrigerated before baking.
- Feel free to substitute the chicken with a variety of vegetables for a vegetarian option.
- Garnish with fresh basil before serving for added flavor.
