Classic Christmas Eve Lasagna – A Cozy Holiday Tradition


Ingredients

Scale
  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups cooked, shredded chicken or sautéed vegetables (zucchini, mushrooms, spinach)
  • 4 cups tomato sauce or marinara
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste
  • 2 cups ricotta cheese
  • 1 large egg
  • 1½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Boil lasagna noodles in salted water until al dente. Drain and lay flat to prevent sticking.
  2. Heat olive oil in a skillet. Cook onion until softened, then add garlic. Stir in chicken or vegetables, tomato sauce, herbs, salt, and pepper. Simmer 15–20 minutes.
  3. Combine ricotta, egg, half the mozzarella, and Parmesan in a bowl. Mix until smooth.
  4. Spread a thin layer of sauce in a 9×13 baking dish. Layer noodles, ricotta mixture, sauce, and mozzarella. Repeat layers and finish with sauce and cheese on top.
  5. Cover with foil and bake at 375°F (190°C) for 30 minutes. Uncover and bake another 15–20 minutes until bubbly and golden.
  6. Let the lasagna rest at least 15 minutes before slicing.

Notes

  • This lasagna can be prepared ahead of time and refrigerated before baking.
  • Feel free to substitute the chicken with a variety of vegetables for a vegetarian option.
  • Garnish with fresh basil before serving for added flavor.
