An easy and utterly addictive holiday treat featuring a crunchy saltine cracker base, rich buttery toffee, decadent chocolate, and festive sprinkles. Perfect for parties, gifting, or a quick, delightful snack.


Ingredients

  • 1 sleeve saltine crackers (approx. 40)
  • 1 cup (226g) unsalted butter
  • 1 cup (200g) packed light brown sugar
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea salt (optional)
  • 2 cups (340g) semi-sweet chocolate chips
  • 1/2 cup festive Christmas sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line a large, rimmed baking sheet with parchment paper, extending over the edges for handles.
  2. Arrange saltine crackers in a single layer on the prepared baking sheet, covering the surface.
  3. In a heavy-bottomed saucepan, combine butter and brown sugar. Melt over medium heat, stirring until smooth. Bring to a vigorous, rolling boil.
  4. Boil vigorously for 3-5 minutes without stirring (or until 285°F/140°C on a candy thermometer). Remove from heat and stir in vanilla extract and optional salt.
  5. Immediately pour the hot toffee mixture evenly over the arranged crackers.
  6. Bake for 5-7 minutes until the toffee is bubbly and golden. Remove the baking sheet from the oven and place on a wire rack.
  7. Immediately sprinkle chocolate chips evenly over the hot toffee. Let sit for 5 minutes to melt, then use an offset spatula to spread the melted chocolate into a smooth, even layer.
  8. While the chocolate is still wet and warm, lavishly sprinkle with festive Christmas sprinkles.
  9. Carefully transfer the baking sheet to the refrigerator and chill for at least 1-2 hours, or until the chocolate and toffee layers are completely set and firm.
  10. Once chilled, lift the entire slab using the parchment paper handles. Transfer to a clean cutting board and break into irregular, bite-sized pieces using your hands or a sharp knife.
  11. Serve immediately. Store any leftover Christmas Crack Cookies in an airtight container at room temperature for up to 1 week, or in the refrigerator for up to 2 weeks. Allow refrigerated cookies to sit out for a few minutes before serving for optimal texture.
