  • 100ml double cream

Instructions

  1. Preheat your oven to 180°C (160°C fan). Line a 23×33 cm Swiss roll tin with parchment paper.
  2. Make the brownie sponge: Beat the eggs and golden caster sugar until thick and pale. Gently fold in sifted flour and cocoa powder. Stir in the melted butter until just combined.
  3. Bake the sponge: Pour the batter into the prepared tin and bake for 10-12 minutes, or until springy to the touch. Do not overbake.
  4. Roll the sponge while warm: Immediately turn the cake onto parchment paper. Roll it from the short edge, with the parchment inside. Let it cool completely while rolled up.
  5. Whip the cream: Beat the double cream, vanilla extract, and icing sugar until soft peaks form.
  6. Fill the cake: Gently unroll the cooled sponge. Spread the cream filling evenly over the surface. Re-roll the sponge gently.
  7. Prepare the ganache: Gently heat the 100ml double cream until steaming. Pour it over the chopped dark chocolate. Let it sit for one minute, then stir until silky smooth.
  8. Finish and decorate: Spread the ganache over the rolled log. Use a fork to create a bark-like texture. Dust with icing sugar for a snowy effect.
