- 100ml double cream
- 100g dark chocolate, chopped
Instructions
- Preheat your oven to 180°C (160°C fan). Line a 23×33 cm Swiss roll tin with parchment paper.
- Make the brownie sponge: Beat the eggs and golden caster sugar until thick and pale. Gently fold in sifted flour and cocoa powder. Stir in the melted butter until just combined.
- Bake the sponge: Pour the batter into the prepared tin and bake for 10-12 minutes, or until springy to the touch. Do not overbake.
- Roll the sponge while warm: Immediately turn the cake onto parchment paper. Roll it from the short edge, with the parchment inside. Let it cool completely while rolled up.
- Whip the cream: Beat the double cream, vanilla extract, and icing sugar until soft peaks form.
- Fill the cake: Gently unroll the cooled sponge. Spread the cream filling evenly over the surface. Re-roll the sponge gently.
- Prepare the ganache: Gently heat the 100ml double cream until steaming. Pour it over the chopped dark chocolate. Let it sit for one minute, then stir until silky smooth.
- Finish and decorate: Spread the ganache over the rolled log. Use a fork to create a bark-like texture. Dust with icing sugar for a snowy effect.
