Description

Irresistible Chicken Roll Up Lasagna is a creamy, cheesy, and comforting dish perfect for family dinners or meal prep. It features tender chicken and Alfredo sauce rolled into lasagna noodles, offering a convenient and flavorful alternative to traditional lasagna.

  • 12 cooked lasagna noodles
  • 2 cups cooked shredded chicken (rotisserie works great)
  • 3 cups Alfredo sauce (store-bought or homemade)
  • 2 cups ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Boil lasagna noodles until al dente. Drain and lay flat on parchment paper to prevent sticking.
  3. In a bowl, mix ricotta cheese, egg, garlic powder, Italian seasoning, and half of the Parmesan cheese. Fold in the shredded chicken.
  4. Spread the chicken and ricotta mixture evenly over each cooked lasagna noodle. Sprinkle with mozzarella cheese.
  5. Roll up each noodle tightly, starting from one end.
  6. Place the chicken roll up lasagna rolls seam-side down in the prepared baking dish.
  7. Pour the Alfredo sauce evenly over the top of the rolls. Sprinkle with the remaining Parmesan cheese.
  8. Cover the baking dish with aluminum foil. Bake for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.
  10. Garnish with fresh parsley before serving hot.

Notes

  • Using rotisserie chicken saves time.
  • Do not overcook the lasagna noodles; they should be slightly firm to facilitate rolling.
  • Spread a thin layer of Alfredo sauce on the bottom of the baking dish to prevent sticking.
