Description
Cheesy Shredded Beef Crunch Rolls are a delicious snack filled with tender shredded beef and gooey mozzarella cheese, wrapped in crispy egg roll wrappers.

- 2 cups cooked shredded beef (slow-cooked, leftover pot roast, birria beef, or barbacoa)
- 1 ½ cups mozzarella cheese (cut into sticks or cubes)
- 2 green onions, finely sliced
- 1 tbsp chopped cilantro (optional)
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Salt & pepper to taste
- 12 egg roll wrappers or spring roll wrappers
- Water for sealing
- Oil for frying
- Optional Dipping Sauces: Spicy mayo, Creamy ranch, Jalapeño queso, Sweet chili sauce
Instructions
- Prepare the filling: In a bowl, mix together shredded beef, green onions, cilantro, garlic powder, smoked paprika, salt & pepper. Set aside. Cut mozzarella into thick sticks or cubes (for maximum melt).
- Assemble the rolls: Lay out a wrapper with a corner pointing toward you (diamond shape). Add a spoonful of shredded beef near the bottom corner. Place a mozzarella strip or cubes on top. Fold the bottom corner over the filling. Fold in the left and right corners. Roll upward tightly. Seal the edge with a dab of water. Repeat for all rolls.
- Fry: Heat oil to 350°F (175°C). Fry rolls in batches for 3–4 minutes, until golden and extra crispy. Drain on paper towels.
- Serve: Serve hot while the cheese is molten — the crunch + gooey melt is PERFECT. Sprinkle with extra green onions, cilantro, chili flakes. Pair with your favorite dipping sauces.
