Description

These soft and cheesy mini egg bites are loaded with seasoned sausage and baked to golden perfection. Ideal for quick breakfasts, snacks, or brunch platters.


Ingredients

  • 6 large eggs
  • ½ cup milk or heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder (optional)
  • 1 cup cooked breakfast sausage (crumbled)
  • 1 cup shredded cheddar cheese (or a mix of cheeses)
  • 1 tbsp chopped parsley (optional)
  • Non-stick cooking spray or butter (for greasing the pan)

Instructions

  1. In a skillet over medium heat, cook sausage until browned. Drain excess grease and set aside to cool slightly.
  2. In a medium bowl, whisk eggs, milk/cream, salt, pepper, and garlic powder. Mix until well combined.
  3. Preheat oven to 180°C / 350°F. Generously grease a 12-cup muffin pan. Divide the cooked sausage evenly into each cup. Sprinkle cheese over the sausage. Pour the egg mixture into each cup, filling about ¾ full.
  4. Bake for 18–22 minutes, or until the egg bites are puffed, golden, and set in the center.
  5. Let cool briefly, then remove. Garnish with parsley if desired. Enjoy warm — or store for later!
