Description

A creamy and cheesy dip made from roasted cauliflower, perfect for parties or family dinners.


Ingredients

Scale
  • 1 medium head cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 34 garlic cloves
  • 4 oz cream cheese
  • 1/2 cup plain yogurt
  • 1 cup grated Parmesan (divided)
  • 1 cup white cheddar, shredded
  • Pinch red pepper flakes
  • Chopped green onions

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, salt, and pepper, then spread on a baking sheet.
  3. Roast for 25-30 minutes until golden and caramelized.
  4. Transfer warm cauliflower to a food processor, add garlic, cream cheese, yogurt, Parmesan, cheddar, and salt; blend until smooth.
  5. Fold in green onions and red pepper flakes.
  6. Spoon mixture into a baking dish, top with remaining Parmesan, and bake for 20 minutes at 375-400°F until golden.
  7. Serve warm with baguette slices, crackers, or veggies.

Notes

Can be made vegan by substituting cashew cream and nutritional yeast for dairy. Adjust seasonings and toppings to customize for different cuisines.
