Description

Ingredients

  • 3 medium-sized potatoes, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • Lime wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss diced potatoes with olive oil, salt, pepper, and paprika. Roast for 25-30 minutes, flipping halfway through for even crispiness.
  3. In a skillet, cook the ground beef or turkey over medium heat, breaking it up as it cooks. Stir in taco seasoning and water. Let simmer for 5 minutes.
  4. Once potatoes are crispy, divide them among serving bowls. Top with taco meat, shredded cheddar cheese, and return to the oven for 5-7 minutes to melt the cheese.
  5. Remove from the oven, then top with salsa, sour cream, diced red onion, cilantro, and a squeeze of lime juice. Serve warm!
