Description

This hearty Breakfast Casserole combines savory pork sausage, fluffy eggs, sautéed bell peppers, green onions, and melted cheddar cheese baked into a comforting dish.


Ingredients

  • 2 pounds pork sausage
  • 12 eggs
  • 1 cup sour cream (light or regular) (240 g)
  • 1/4 cup milk (60 ml)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 green onions, chopped
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 2 cups shredded cheddar cheese (200 g)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13 inch baking pan with cooking spray to prevent sticking.
  2. In a large bowl, combine eggs, sour cream, milk, shredded cheddar cheese, kosher salt, and black pepper. Mix on low speed using an electric mixer just until the ingredients are evenly combined.
  3. Heat a large skillet over medium heat. Add the pork sausage and cook until it is browned, breaking it apart into small pieces with a wooden spoon as it cooks. Drain most of the grease and transfer the cooked sausage to the bowl with the egg mixture.
  4. In the same skillet used for the sausage, add the diced green and red bell peppers along with chopped green onions. Sauté them for 2 to 3 minutes until they are slightly softened, then add these vegetables to the egg and sausage bowl. Stir everything together until well combined.
  5. Pour the entire mixture into the prepared 9×13 inch baking pan. Bake in the preheated oven for 35 to 50 minutes, or until the edges are set and the center is just barely jiggly, ensuring the casserole is cooked through but still moist inside.
  6. Let the casserole cool slightly before serving. Store any leftovers in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave for a quick and convenient breakfast.
