Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with heavy-duty non-stick aluminum foil and spray with cooking spray.
  2. Melt the butter in a large microwave-safe bowl. Let it cool slightly.
  3. Add the egg, light brown sugar, cinnamon, ginger, allspice, cloves, and vanilla extract to the cooled melted butter. Whisk to combine.
  4. Add the all-purpose flour and kosher salt to the wet ingredients. Stir until just combined. Do not overmix.
  5. Gently fold in the grated carrots.
  6. Pour the carrot cake batter into the prepared pan and smooth the top.
  7. In a medium bowl, beat the softened cream cheese, egg yolk, and granulated sugar until smooth and fluffy, about 4 minutes.
