- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup light brown sugar
- 1/2 cup unsalted butter
- 1/2 cup sour cream
- 2 egg whites
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup milk
- 1/4 cup mini chocolate chips
- 1 cup mascarpone cheese
- 1 cup confectioners’ sugar
Instructions
- Preheat oven to 350°F (175°C) and line a standard cupcake pan with liners.
- Cream the unsalted butter, sugar, and light brown sugar together for 3 to 4 minutes until fluffy.
- Add in the sour cream and vanilla extract; mix well.
- Add egg whites one at a time, mixing well after each addition.
- In a separate bowl, combine flour, baking powder, ground cinnamon, and salt.
- Incorporate the dry ingredients alternately with the milk into the batter until well combined.
- Fill cupcake liners halfway and bake for 15-17 minutes until a toothpick comes out clean.
- In another bowl, beat mascarpone cheese and confectioners’ sugar until smooth to make the frosting.
- Once cooled, pipe the frosting on top of the cupcakes and sprinkle with mini chocolate chips.
Notes
These cupcakes can be modified with various toppings, like chopped pistachios or citrus zest for added flavor.
