Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 cups vegetable broth
  • 1 pound cabbage, shredded
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 bay leaf
  • Salt to taste

Instructions

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  • Add garlic, thyme, basil, black pepper, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
  • Pour in vegetable broth. Add shredded cabbage, diced tomatoes, and bay leaf.
  • Bring to a boil, then reduce heat and simmer, covered, for at least 20-30 minutes, or until cabbage is tender.
  • Remove bay leaf. Season with salt to taste.
