Description

Unbelievable Blueberry French Toast Casserole – The Ultimate Easy Breakfast Recipe

Ingredients

Scale
  • 8 slices of thick-cut bread (such as challah, brioche, or French bread)
  • 1 ½ cups fresh blueberries (or frozen if fresh is not available)
  • 6 large eggs
  • 2 cups whole milk
  • ½ cup heavy cream
  • ½ cup maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons unsalted butter (melted, for greasing)
  • Powdered sugar (for dusting, optional)
  • For the topping:
  • 1/3 cup brown sugar
  • 2 tablespoons cold butter (cut into small pieces)
  • 1 tablespoon all-purpose flour

Instructions

  1. Start by slicing your bread into cubes. Cut them into 1-inch cubes.
  2. In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, cinnamon, vanilla extract, and a pinch of salt until well combined.
  3. Butter your 9×13-inch baking dish with melted butter. Place the bread cubes into the baking dish, spreading them evenly.
  4. Gently pour the custard mixture over the bread cubes, ensuring all pieces are coated. Press the bread into the liquid with a rubber spatula.
  5. Add the blueberries over the top of the bread mixture, gently pressing them into the bread.
  6. Cover the baking dish with plastic wrap and refrigerate overnight (or for at least 4 hours).
  7. In a small bowl, combine brown sugar, cold butter, and flour for the topping. Mix until it resembles coarse crumbs and sprinkle over the casserole.
  8. Preheat your oven to 350°F (175°C). Remove the casserole from the fridge and let it sit for about 10 minutes before baking.
  9. Bake for 45-50 minutes, or until golden brown and a knife inserted in the center comes out clean.
  10. Let it cool for a few minutes. Dust with powdered sugar if desired, and serve with extra maple syrup.

Notes

  • This casserole can be made ahead of time for convenience.
  • Use fresh or frozen blueberries based on availability.
  • Adjust the sweetness by varying the amount of maple syrup.
