Ingredients

  • small to medium-sized sweet onions (like Vidalia or Walla Walla)
  • yellow onions (optional)
  • all-purpose flour
  • gluten-free all-purpose flour blend (for gluten-free version)
  • paprika
  • garlic powder
  • onion powder
  • cayenne pepper
  • salt
  • buttermilk
  • regular milk (for buttermilk substitute)
  • vinegar or lemon juice (for buttermilk substitute)
  • sour cream
  • mayonnaise
  • fresh dill
  • chives
  • Greek yogurt (optional substitute for sour cream)

Instructions

  1. Prepare the Onions: Start by peeling the onions and cutting off the top (the root end should remain intact). Slice them into quarters, stopping just before you reach the root to keep them together. Gently pull apart the layers to create a blooming effect.
  2. Soak in Buttermilk: Place the cut onions in a bowl of buttermilk and let them soak for at least 30 minutes. This step helps to tenderize the onions and adds moisture, making them crispy when fried.
  3. Make the Coating: In a separate bowl, mix the flour with the spices—paprika, garlic powder, onion powder, cayenne pepper, and salt. This seasoning blend will give the onions a flavorful crust.
  4. Dredge the Onions: After soaking, remove the onions from the buttermilk, allowing any excess to drip off. Carefully coat each onion in the seasoned flour mixture, ensuring all layers are well-covered. For an extra crunch, you can dip them back in buttermilk and re-dredge in flour.
  5. Heat the Oil: In a deep pot or fryer, heat vegetable oil to 350°F (175°C). You’ll need enough oil to submerge the onions completely.
