- 1 tablespoon unsalted butter
- 6–8 slices thick-cut beef bacon
- Sourdough or rustic country loaf bread
- Sharp cheddar cheese
- Creamy mozzarella cheese
Instructions
- Slice the onions thinly.
- In a large skillet over medium heat, melt 1 tablespoon of butter.
- Add the onions and a pinch of salt, cooking slowly for 20-30 minutes until golden brown and sweet.
- In a separate skillet, cook 6-8 slices of beef bacon until crispy, about 5-7 minutes per side.
- Place the cooked bacon on a paper towel to absorb excess grease.
- Take two slices of bread and butter one side of each.
- On the unbuttered side, layer a slice of cheddar cheese, followed by caramelized onions, beef bacon, and another slice of cheese.
- Top with the second slice of bread, buttered side up.
- Heat a skillet or griddle over medium heat and place the sandwiches in the skillet.
- Cook for about 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until the other side is golden and the cheese has melted.
- Remove the sandwiches from the pan and let them sit for a minute before slicing in half.
