- 3 egg yolks
- 3/4 cup sugar
- 1 tablespoon powdered gelatin
- 1 cup milk
- 1 1/2 teaspoons vanilla extract
- 1 cup heavy cream
- Fresh berries (for serving)
Instructions
- In a bowl, combine egg yolks and sugar. Beat with an electric mixer until pale and fluffy.
- In a jug, mix 8 tablespoons of freshly boiled water with the powdered gelatin. Stir until dissolved, then set aside.
- In a saucepan, heat milk and vanilla extract over medium heat until boiling.
- Slowly add hot milk to the egg mixture, whisking constantly.
- Gradually add this mixture back into the saucepan and cook for 2 minutes, whisking, until slightly thickened.
- Remove from heat and stir in the dissolved gelatin until fully combined.
- Allow the mixture to cool for at least 10 minutes.
- Whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cooled custard mixture.
- Pour the Bavarian cream mixture into dessert molds.
- Chill in the refrigerator for at least 6 hours, or preferably overnight, until set.
- To serve, carefully turn the Bavarian cream out onto plates.
- Garnish with fresh berries before serving.
Notes
- For flavor variations, you can add orange zest, lemon zest, or coffee to the milk while heating.
- Other fruit toppings like mango, peaches, or kiwi can be used instead of berries.
- For a chocolate version, stir melted chocolate into the custard before folding in the whipped cream.
- Store leftovers in the refrigerator for up to 2-3 days.
