  • 3/4 cup sugar
  • 1 tablespoon powdered gelatin
  • 1 cup milk
  • 1 1/2 teaspoons vanilla extract
  • 1 cup heavy cream
  • Fresh berries (for serving)

Instructions

  1. In a bowl, combine egg yolks and sugar. Beat with an electric mixer until pale and fluffy.
  2. In a jug, mix 8 tablespoons of freshly boiled water with the powdered gelatin. Stir until dissolved, then set aside.
  3. In a saucepan, heat milk and vanilla extract over medium heat until boiling.
  4. Slowly add hot milk to the egg mixture, whisking constantly.
  5. Gradually add this mixture back into the saucepan and cook for 2 minutes, whisking, until slightly thickened.
  6. Remove from heat and stir in the dissolved gelatin until fully combined.
  7. Allow the mixture to cool for at least 10 minutes.
  8. Whip the heavy cream until stiff peaks form.
  9. Gently fold the whipped cream into the cooled custard mixture.
  10. Pour the Bavarian cream mixture into dessert molds.
  11. Chill in the refrigerator for at least 6 hours, or preferably overnight, until set.
  12. To serve, carefully turn the Bavarian cream out onto plates.
  13. Garnish with fresh berries before serving.

Notes

  • For flavor variations, you can add orange zest, lemon zest, or coffee to the milk while heating.
  • Other fruit toppings like mango, peaches, or kiwi can be used instead of berries.
  • For a chocolate version, stir melted chocolate into the custard before folding in the whipped cream.
