Ingredients

- 2 large eggs
- 1 tablespoon olive oil
- 1 cup fresh spinach (or frozen, thawed and drained)
- 1 cup sliced mushrooms
- Salt, to taste
- Pepper, to taste
- Spring onions or chives, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium heat, add the sliced mushrooms, and cook until golden brown. Remove from skillet and set aside.
- Add the remaining tablespoon of olive oil to the skillet, add the spinach, and toss until wilted. Remove from heat.
- Combine the mushrooms with the spinach.
- Grease two ramekins and divide the mixture between them.
- Crack one egg into each ramekin.
- Bake in the oven for 10 to 15 minutes.
- Once done, remove from oven, season with spring onions, salt, and pepper, and serve hot.
