Mint Chocolate Chip Protein Balls are a no-bake, refreshing, and nourishing snack inspired by the classic mint chocolate chip flavor.
Ingredients

- 1 cup rolled oats
- ½ cup protein powder (vanilla or chocolate)
- ½ cup nut butter (almond or peanut butter)
- ¼ cup honey or maple syrup
- 2–4 tablespoons milk of choice
- ½ teaspoon peppermint extract (adjust to taste)
- ⅓ cup mini chocolate chips
Instructions
- In a bowl, combine rolled oats and protein powder, breaking up any clumps.
- Stir in nut butter, honey or maple syrup, milk, and peppermint extract until a thick dough forms.
- If too dry, add a splash of milk. If too wet, add more oats or protein powder.
- Gently mix in the mini chocolate chips.
- Roll mixture into bite-sized balls and place on a parchment-lined tray.
- Refrigerate briefly to firm up, then enjoy.
