  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • Salt and freshly ground black pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup (240 ml) apple cider (not vinegar)
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, finely chopped (optional)
  • 1 tablespoon apple cider vinegar
  • Optional garnish: Thinly sliced apples or fresh herbs

Instructions

  1. Pat chicken dry and season both sides generously with salt and pepper.
  2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, melt the remaining butter and sauté garlic for 30 seconds until fragrant.
  4. Pour in apple cider, brown sugar, Dijon mustard, thyme, rosemary, and apple cider vinegar. Stir to combine and dissolve the sugar.
  5. Let the glaze simmer 6–8 minutes, stirring occasionally, until it thickens and becomes glossy.
  6. Add chicken back into the skillet and coat with the glaze. Reduce heat to low and cook for another 5–7 minutes, or until internal temperature reaches 165°F (74°C).
  7. Spoon glaze over the top and garnish with apple slices or fresh thyme before serving.
